Four Ingredient Frito Lay Soup

Believe it or not, all of this came from the dollar store! I was kinda broke, and starving so I threw a few things together and it was yummers! Also, I realized I didn't leave you guys with a "Food for Thought" scripture last week, so I'll be sure to do so this time, I promise ;)

What you'll need:

1 (15 oz) can of Pinto beans (Bush's brand is the Bee's Knee's)
1 (15 oz) can of Black bean
1 (15 oz) can of Sweet corn
1 (15 oz) can of Diced tomatoes ( Hunts has a fire roasted kind with is delish)
and 1 small bag of frito lays

What to do:

Take 3 Tablespoons of each ingredient and stir them in a small pot on Medium heat. Let the flavors of each cook together for about 5 minutes before adding your favorite seasonings. I added 1 tsp of garlic powder, 1 tsp of chilli powder, 1/2 tsp of salt/pepper mix, and I added about 1/2 a cup of water to dial down the salt. Let this cook for for about a total of 15-20 minutes to let all of the flavors come together. Keep in mind that this recipe is for a single, party of one!

Raw Tropical Sorbet and a Blog Feature!! Oh My!


Raw Tropical Soft Serve “Ice Cream” Sorbet!

Today’s blog features one of my favorite vegheads! She’s inspired me to live a vegetable, fruit friendly lifestyle since we crossed paths in college and I’ve recently decided to follow in her footsteps by becoming a vegetarian. Crystal (featured to the right, in this Alice in Wonderland, Nicki Minaj doll photo) has decided to go raw this year which is inspiring, buuuuttt I dare not step into that territory yet! I’m very proud and privileged to feature the cutest, sweetest, veghead I know. Please look forward to more recipes from Crystal in the future! What you need: (What I used)

3 frozen strawberries

3 chunks of frozen peaches

4 blueberries

1 chunk of pineapple

 

Mix all in a food processor until completely smooth. I topped mine with 2 blueberries, 2 walnuts and a heart shaped pineapple chunk. Below is Crystals version that inspired me! She even Mad a drizzle! Sexy!

 

Raw Strawberry Soft Serve “Ice Cream” with Strawberry Drizzle

 

What you need: ( What Crystal used)

1 frozen strawberry

1 fresh strawberry

1 frozen banana

 

She made a strawberry drizzle to top off her Soft Serve (fancy pants):

 

Drizzle:

4 frozen strawberries

1 teaspoon of raw honey

A squeeze of lemon/lime

Thaw the strawberries, add honey and lemon juice and mash all with a fork and pour over ice cream.

 

Feel free to make any flavor ice cream by adding other frozen fruit to the frozen banana. I chose not to use banana because they are my least favorite creation, next to spiders, but that’s neither here nor there. A few suggestions for frozen fruit options: Mangos, papaya, or raspberries!

 

Crystals recipe totaled to 1 banana, 6 strawberries, and a teaspoon of honey. Which is about 130 calories for a bowl of ice cream! This a total guilt free way to fight those sweet tooth cravings, which I have about once every thirty seconds! Enjoy! Have fun! And be creative!

Creamy Spinach Stir-fry Tacos w/ Brown Rice

Creamy Spinach Stir Fry w/ Brown Rice Tacos (Ridiculously Quick and Easy)

You Need:

1 pkg of frozen creamy spinach ( Green Giant is delicious)

1 cup of fresh mixed vegetables ( I used a mushrooms, red/yellow peppers, chopped cabbage, and onions, just a mixture of random veggies I had in the fridge)

1 pkg of Boil in a Bag Brown Rice (I cheated, so what!)

1 box of white corn taco shells, or whole wheat soft tortillas

2 tablespoons of olive oil, and your favorite seasonings on deck (I used kosher salt, cayenne pepper, and garlic salt)

To Do:

Pre-heat oven to toast your tortilla shells.

In a small pot bring about 2 cups of water to a simmer, add about 2 teaspoons of salt to help bring the water to a boil. ( this is for your boil in a bag) Once your water is ready toss your rice in and let it cook for about 10 min or until tender.

In a large non-stick pan heat your olive oil, and toss in your fresh veggie mixture and cook on high. Sprinkle with seasonings and let it cook for 7-10 min. tossing it around with your spatula so that it cooks evenly. Once your fresh vegetables look tender,  turn the heat down to medium, add about 3 Tablespoons of your creamy spinach and cook for about 2 min. and set aside.

Grab 2 toasted tortilla shells and line the bottom with any of the options listed below, if you don’t have any options, line the base of each shell with a tablespoon of rice in each, then your  tomatoes and lettuce (again, optional) and then your stir fry vegetable mix to top it off.

Optional:

Add guacamole or hummus to the base of your tortilla shell for an extra little zing of creamy goodness, you can also layer with shredded lettuce and tomatoes to beef it up a little.

*Keep in mind that I’m single, so this recipe is fit for just one person. You may have to increase the ingredients depending on how many people  you’re entertaining for lunch or dinner*

Maybe try Spanish rice instead of brown rice, if you’re feeling sassy. It contains a few more calories and lots more sodium than brown rice.

Also, with the extra rice and extra vegetables you have left, mix them together and there’s lunch for the next day!

In the dog house for Valentine's Day?? Try this simple delicious recipe.

Saturated Herb Chicken Breast, Cheesy Stuffed Shells, and Garlic Parmesan Broccoli

What you need:
1 pack of cxn breast
1 jar of marinara sauce (can be made from scratch, too but I pulled the lazy card)
2 fresh broccoli heads
1 bag of frozen stuffed shells (I cheated and didn't make them from scratch) they can be purchased at your nearest Trader Joe's for a whopping $1.99 a bag
A mix of Mozzarella and Parmesan cheese (I love cheese, minus the lactose)
A mixture of any herbs in your pantry (I used thyme, rosemary, oregano, dill, and basil)
About 1-1/2 cups of olive oil,(or use Italian dressing as a substitute) to cook your chicken
2 Tablespoons of butter
2 Tablespoons of sour cream

For the shells:
Follow the quick and easy directions on back, add yummy marinara and top with both cheeses right before you serve it

For the chicken:
In a large bowl, put cxn, dry herbs of choice, and all of your favorite seasonings... Or use all of my favorites like onion/garlic powder,old bay, sea salt, crushed black pepper, and whatever else you love. Pour a little Italian dressing on top along with a lil olive oil. Let it sit uncovered for 30 minutes, if you have that much time, if not place everything in a non stick pan and cook for 20-30 minutes, turning occasionally til lightly golden brown on both sides.

For the broccoli:
Bring salt water to a boil, allow broccoli to cook (7-9 min) til slightly firm and green color is not dull. Strain water and place back into pot, adding the sour cream and butter. Sprinkle with a lil sea salt and toss with a little garlic powder. I sprinkled a lil cheese on my broccoli bc cheese is awesome!

You don't have to plate it fancy, but since you're already in trouble, I say give it a go! Good luck with dinner, and I hope it'll help he/she forget that you didn't send flowers or chocolates... Enjoy!
