Creamy Spinach Stir Fry w/ Brown
Rice Tacos (Ridiculously Quick and Easy)
You Need:
1 pkg of frozen creamy spinach (
Green Giant is delicious)
1 cup of fresh mixed vegetables (
I used a mushrooms, red/yellow peppers, chopped cabbage, and onions, just a
mixture of random veggies I had in the fridge)
1 pkg of Boil in a Bag Brown Rice
(I cheated, so what!)
1 box of white corn taco shells,
or whole wheat soft tortillas
2 tablespoons of olive oil, and
your favorite seasonings on deck (I used kosher salt, cayenne pepper, and
garlic salt)
To Do:
Pre-heat oven to toast your
tortilla shells.
In a small pot bring about 2 cups
of water to a simmer, add about 2 teaspoons of salt to help bring the water to
a boil. ( this is for your boil in a bag) Once your water is ready toss your
rice in and let it cook for about 10 min or until tender.
In a large non-stick pan heat
your olive oil, and toss in your fresh veggie mixture and cook on high. Sprinkle
with seasonings and let it cook for 7-10 min. tossing it around with your
spatula so that it cooks evenly. Once your fresh vegetables look tender, turn the heat down to medium, add about 3
Tablespoons of your creamy spinach and cook for about 2 min. and set aside.
Grab 2 toasted tortilla shells
and line the bottom with any of the options listed below, if you don’t have any
options, line the base of each shell with a tablespoon of rice in each, then
your tomatoes and lettuce (again,
optional) and then your stir fry vegetable mix to top it off.
Optional:
Add guacamole or hummus to the
base of your tortilla shell for an extra little zing of creamy goodness, you
can also layer with shredded lettuce and tomatoes to beef it up a little.
*Keep in mind that I’m single, so
this recipe is fit for just one person. You may have to increase the
ingredients depending on how many people
you’re entertaining for lunch or dinner*
Maybe try Spanish rice instead of
brown rice, if you’re feeling sassy. It contains a few more calories and lots
more sodium than brown rice.
Also, with the extra rice and
extra vegetables you have left, mix them together and there’s lunch for the
next day!
